This class is a how-to on beef, covering different cuts, meat vernacular, and an understanding of what “natural” and “organic” mean, plus cooking methods appropriate for each cut. Menu: Pan roasted steaks with wild mushroom sauce; Chili braised short ribs; Beef satay with peanut sauce; Sautéed medley of baby vegetables. Price: $95 per person.

That old adage “… never watch law or sausage being made” does not apply to this sausage. Using the best quality ingredients, you’ll learn how to grind the meat, season and stuff your own sausages. Recipes: Chorizo; Maple blueberry sausage patties; Italian sausage. Price: $85 per person.
